Vanilla Cocoa Marble Cake Recipe
This week we’ve been baking, trying to make something out of nothing with varying successes. With no self-raising flour in the house and no hope of finding it available in the shops, we turned to plain flour recipes.
This vanilla and cocoa marble cake was so easy to make that my 3-year-old was left responsible for mixing the ingredients which was perfect entertainment for all of 10 minutes.
The result was a smooth and scrumptious cake that felt like a warm hug and needless to say it was demolished in one day by my family of three!! Try it….
INGREDIENTS
250g (9 oz) Butter, Softened
280g (10 oz) Caster (Superfine) Sugar
4 Eggs
280g (10 oz) Plain Flour
1 1/2 Teaspoons Baking Powder
150ml (5 Fl oz) Pouring (Single) Cream
1 Teaspoon Vanilla Extract
2 Tablespoons Unsweetened Cocoa Powder
Preheat the oven to 180° (350°F/Gas 4). Grease a tin, approx 24cm. Beat the butter and sugar until pale and creamy. Add the eggs one at a time, beating well after each one goes in. Sift in the flour and baking powder and beat well, then beat in the cream so that you have a fluffy mixture. Divide the batter into halves, mix the cocoa powder into one half, and the vanilla extract into another. Add the vanilla batter into your greased tin, then dollop your chocolate batter on top, spread evenly using a knife. Use a skewer to make random swirls so the two batters become stripey.
Bake for 50-60 minutes, or until a skewer poked into the centre comes out clean. Cool in the tin before turning out.
