Ella Leeds, a London restaurant publicist originally from Tunbridge Wells shows us how to make the perfect Scotch Egg…..

These scotch eggs are the perfect pairing for picnics, barbecues, or just as an afternoon snack. They’re baked in the oven, instead of being deep fat fried, so save on fat and calories along the way, whilst still being indulgent.

Makes 4 large scotch eggs

Ingredients

5 Medium Eggs (1 Egg Beaten)

4 Sausages

5 Tbsp Plain flour

Bread Crumbs (ready-made) + ½ tsp chilli flakes and ½ tsp dried coriander

A handful of fresh coriander

Tsp of Dijon mustard

Sunflower oil – enough to coat the bottom of a frying pan

Method

  • Preheat your oven to 180° fan.

  • Soft boil 4 medium eggs in a pan for 5 mins. Carefully spoon the eggs out into a bowl of iced water and set aside.

  • Get your sausages and remove the meat from the skin into a bowl. Stir in the mustard, a handful of fresh coriander, salt, and pepper. Now divide your sausage meat into 4 balls and set aside.

  • Once the eggs are chilled for around 10-15 mins, peel them and set them aside on a plate.

  • In three separate bowls, beat one egg, add plain flour with seasoning, add the breadcrumbs.

  • Flour a surface and roll out the first ball of sausage meat so it is roughly ½ cm thick. Get one boiled egg and carefully wrap the sausage meat around it in the palm of your hand – make sure you conceal every part of the egg or you risk the egg splitting in the cooking process!

  • Next, dip the ball of meat into the flour, followed by the egg, followed by breadcrumbs. Repeat this for all 4 eggs.

  • Once all the scotch eggs are ready to go add the sunflower oil into a frying pan and let it heat up. Once hot, add all 4 eggs into the pan and carefully brown the surface of each scotch egg (this should only take 5 mins). Be careful when turning as the egg inside is very delicate.

  • Once all scotch eggs have been browned, put them on an ovenproof tray and bake in the oven for 10 mins.

  • Let the scotch eggs sit for a little to harden up and then serve!
