Loafing Around
When it's a cold, wet and miserable day I like to bake, maximum comfort is what I'm after, in the form of stodgy calories. I've had this recipe for years and it's so dog-eared I couldn't even tell you which magazine I snipped it out of but it's so good I wanted to share it....
Ingredients:
125g Butter, 180g Dark Brown Sugar, 4 Medium Sized Bananas (mashed), 2 Eggs, 1 Teaspoon Vanilla Extract, 1 Teaspoon Ground Cinnamon, 250g Plain Flour, 1 Teaspoon Baking Powder, 3/4 Teaspoon Bicarbonate of Soda, 3 Tablespoons of Warm Milk.
Preheat oven to 180 degrees (or Gas Mark 4) and butter a loaf tin approx. 12 x 4".
Cream the butter and sugar until smooth and whisk in the bananas. Add the eggs, vanilla, cinnamon and a pinch of salt and whisk in well.
Sieve in the flour and baking powder and beat until smooth. Mix the bicarbonate of soda into the milk and stir into the batter.
Scrape the mixture into the tin and bake for approx. 50 mins, until the bread is crusty on the top and a skewer poked into the middle comes out clean. Turn out onto a rack to cool.
Cuts into 10-12 slices.
